Fudge Pie

This is definitely a “lick the bowl” recipe (with disclaimers re: salmonella, etc.).

1 3/4 cups unsweetened chocolate wafers (Guittard makes them)
3 cubes butter, (unsalted, or maybe 2 cubes unsalted, one salted)
5 eggs
1 1/2 cups sugar
Salt
2 teaspoons vanilla
1 unbaked single-crust pie shell

Preheat oven to 350F. Melt the chocolate and butter in a double boiler until melted. Combine the eggs, sugar and vanilla. Combine the egg mixture with the chocolate mixture. You could add a pinch or two of salt here (I do)…. Bake in the unbaked pie shell for about an hour, until it forms a “top hat.”

Let cool. Absolutely serve with whipped cream. Perhaps strawberries…..
